Watermelon Tilt
A light and refreshing summer cocktail
Ingredients:


1 small personal watermelon
2 cups watermelon juice made from pulp of watermelon
2 cups white grape juice
4 jiggers vodka or orange vodka

Directions:

Cut the top off the watermelon (similar to cutting to off of a pumpkin) and retain top. Remove pulp of watermelon and place in blender or food processor. Set hollowed watermelon into a bowl of ice. Puree or chop the pulp until liquefied. Strain pulp through a very fine mesh colander or cheese cloth. Measure 2 cups watermelon juice, 2 cups white grape juice and 4 jiggers of vodka and pour into watermelon. Poke two holes into lid and insert straw. Enjoy.

This recipe can be increased to make enough for a party by using one large watermelon, 4 cups watermelon juice, 4 cups white grape juice, and 8 jiggers of vodka. Repeat until watermelon is full.

What is a jigger? Using a glass shot glass pour liquid to brim of glass (past the line.) The line on the glass is a shot, or 1 oz of fluid. To the top of the glass is 2 ounces of fluid. If using a cone shaped metal measuring tool, use the big end. The big end of a metal measuring tool is usually only 1.5 fluid ounces, so taste your concoction to make sure you have enough liquor.





Easy Enchilada Sauce


Ingredients:

1/4 cup vegetable oil
2 tbls self-rising flour
1/4 cup chili powder
1 (8 oz) can tomato sauce
1 1/2 cups water
1/4 tsp ground cumin
1/4 tsp garlic powder
1/4 tsp onion powder
Salt  to taste

Directions:
Heat oil in a skillet over medium-high heat. Stir in flour and chili powder, reduce heat to medium, and cook until lightly brown, stirring constantly to prevent burning flour.

Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly. Season to taste with salt.

Chicken Wing Marinade

Ingredients


2 garlic cloves
2-3 teaspoons balsamic vinegar
1-2 teaspoons ground pepper
1-2 teaspoons Italian seasoning
Olive oil

Directions

Place all ingredients in a food processor or blender. Process until garlic is chopped into small pieces. Add a small amount of water if the mix seems to thick.

Place chicken wings in a large bowl, cover with marinade, stir until completely covered. Place in refrigerator for 10 minutes.

Meanwhile, heat BBQ or inside grill. While chicken is grilling, pour remaining marinade over chicken after the first turn. Grill until chicken is completely cooked and juices run clear, about 20 minutes.
